I made crabcakes. My whole house is happy.

It’s really easy. Makes 5-6 crabcakes
1 pound Fresh Blue Crabmeat backfin or lump ( MD, NC or Gulf-No pasteurized)
1 large egg
2 tablespoons mayonnaise
2 tablespoons Mustard
2 teaspoons baking powder
2 tablespoons Old Bay seasoning
1 tablespoon all purpose flour

In another bowl mix all ingredients except the cracker meal until it is a smooth consistency. Let sit for 5 mins until it has puffed up a bit.

Pour the mixture over the crabmeat. Let it rest for a few minutes to seep into the meat.
Do not stir it.

You can use a rubber spatula to fold the mixture over once or twice being careful not to break any of the lumps.

Take a handful of the mixture and form the crabcakes. Roll them in cracker meal. Let rest for 2 or 3 mins.

If you prefer broiled crabcakes…leave omit the cracker meal. Broil them in the oven until golden.

It’s important to note you can use other types of crab but the flavor will be different. I prefer Blue Crab from the Eastern Shore of MD, North Carolina or the Gulf. Just my personal preference.
