For Lilah! Thai Basil Chicken

This week has been awesome playing catch up with friends I had lost touch with. This recipe is for Lilah sorry it took so long to post! Enjoy!

Thai Basil Chicken

Serves 4-5

Cook time 25 minutes
Total time 45 minutes

Stir Fry

  • 2 Medium Onions (Sliced)
  • 2 Medium Bell Pepper (Red and Green)
  • 2 tablespoons Coconut Oil (or light flavor oil of your choice)
  • 2lb Chicken Breast (Cut in Strips)
  • 4 cloves Garlic (Minced)
  • 1 packet Thai Basil (Chopped. You can substitute Sweet Basil if you cannot find Thai Basil)
  • 1/2 Red Pepper Flakes


  • 2 tablespoons Fish Sauce
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Sugar
  • 1/4 cup Water
  • 1 teaspoon Cornstarch


Stir Fry
1. Heat Oil in a Wok or Saute Pan
2. Saute or stir fry chicken, garlic, and red pepper flakes.
3. Add onions, peppers and basil. Cook until onions are slightly transparent on the edges.
4. Mix together all the sauce ingredients in a bowl. Pour into the Stir Fry and stir to evenly coat the chicken.
