Soft Bake Chocolate Chip Cookies
Ingredients
- 1 cup Butter (unsalted)
- 1 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1 Egg
- 2 teaspoons Vanilla Extract
- 2 cups All Purpose Flour
- 2 teaspoons Cornstarch
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 cup Chocolate Chips
Optional
- 1/2 cup nuts (pecans, walnuts etc.) (chopped)
Directions
1.

Preheat the oven to 350 degrees |

Cream together the butter and sugars until light and fluffy. |
3.
|
Add egg and vanilla. |
4.
|
Mix in flour, cornstarch, baking soda and salt |
5.
|
Mix in chocolate and nuts, if you choose to add nuts. |
6.
|
Scoop onto an ungreased or lined baking sheet. Bake for 10 minutes or until golden brown around the edges. |
Apple Cinnamon Oatmeal Muffins
Ingredients
- 2 cups All-purpose Flour
- 1 1/2 cup Oatmeal (Old Fashioned)
- 1 cup Sugar
- 1 1/2 teaspoon Cinnamon
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 2 Eggs
- 1 cup Milk
- 1/4 cup Butter (melted)
- 1 Apple (Finely Chopped)
- 1/2 teaspoon Vanilla Extract
Directions

Preheat oven to 400 degrees |

Line muffin pans with paper liners |
3.
|
In a large bowl mix together the flour, sugar, cinnamon, baking powder, baking soda and salt |

Beat eggs, milk, vanilla and butter together. |
5.
|
Add apples and flour mixture and mix until all dry ingredients have been incorporated. |
6.
|
Spoon mixture into muffin pan until 2/3 full |
7.
|
Bake 20 to 25 minutes or until golden. |
