As always my kitchen escapades are fueled by my husband and his desire for food that he can no longer get at restaurants in our area. This recipe is inspired by his love for Bojangles BoBerry Biscuits. Since I kidnapped him and made him move to Baltimore he no longer has access to Bojangles. They are only located in the the suburbs of DC. I’m ok with that because who knows what is in the fast food version of these biscuits. As always #RealFoodRules!!
Ingredients
- 2 cups All Purpose Flour
- 4 tsp Baking Powder
- ¼ tsp Baking Soda
- ½ tsp Salt
- 8 tbs Butter (very Cold)
- 1 cup Milk
- 1 cup blueberries (Fresh not frozen)
- ½ Cup Confectioners Sugar
- 1 tsp Vanilla
- 1 TbS Milk
Instructions
- Mix dry ingredients in a large bowl. Cut the butter into the flour mixture. Add milk at the center of the bowl. Mix until a soft ball forms. Press the dough out to one inch thick on a floured surface. Press the blueberries into the top of the dough. Fold the dough in half twice and then press or roll out again to one inch thickness. Cut with a biscuit cutter or use a knife to cut into squares. Bake at 450 degrees for 12 minutes. Mix the powdered sugar, vanilla, and milk. Pour the glaze over the biscuits right out of the oven.
