Soft Bake Chocolate Chip Cookies

Serves 24

Ingredients

  • 1 cup Butter (unsalted)
  • 1 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 Egg
  • 2 teaspoons Vanilla Extract
  • 2 cups All Purpose Flour
  • 2 teaspoons Cornstarch
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Chocolate Chips

Optional

  • 1/2 cup nuts (pecans, walnuts etc.) (chopped)

Directions

1. Preheat the oven to 350 degrees
2. Cream together the butter and sugars until light and fluffy.
3. Add egg and vanilla.
4. Mix in flour, cornstarch, baking soda and salt
5. Mix in chocolate and nuts, if you choose to add nuts.
6. Scoop onto an ungreased or lined baking sheet. Bake for 10 minutes or until golden brown around the edges.

Ingredients

  • 2 cups All-purpose Flour
  • 1 1/2 cup Oatmeal (Old Fashioned)
  • 1 cup Sugar
  • 1 1/2 teaspoon Cinnamon
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1 cup Milk
  • 1/4 cup Butter (melted)
  • 1 Apple (Finely Chopped)
  • 1/2 teaspoon Vanilla Extract

Directions

1. Preheat oven to 400 degrees
2. Line muffin pans with paper liners
3. In a large bowl mix together the flour, sugar, cinnamon, baking powder, baking soda and salt
4. Beat eggs, milk, vanilla and butter together.
5. Add apples and flour mixture and mix until all dry ingredients have been incorporated.
6. Spoon mixture into muffin pan until 2/3 full
7. Bake 20 to 25 minutes or until golden.
