Sundried Tomato & Red Pepper Chicken Penne Pasta


  • 1lb Chicken Breast (cut into pieces)
  • 1 1/2 cup Heavy Cream
  • 1 Red or Orange Bell Pepper (chopped)
  • 1/2 cup Sun Dried Tomatoes (chopped)
  • 1 Onion (finely chopped)
  • 3/4 cups Mozzarella cheese
  • 1/4 cup Parmesan Cheese
  • 1 teaspoon Italian Seasoning (Son of Italy brand is preferred)
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 box Penne Pasta
  • Salt
  • Garlic Powder
  • Onion Powder
  • Black Pepper


1. Put pasta on to boil.
2. Pour Olive oil into a saute pan on medium high heat. Liberally season chicken with onion powder, garlic powder, pepper and salt. Saute the chicken breast until halfway done.
3. Put the peppers and onions in with the chicken and continue to saute until the onions are translucent.
4. Pour in heavy cream.
5. Turn off the pan and blend in cheeses and sun-dried tomatoes.
6. Drain pasta and mix the sauce and pasta together.
7. Garnish with the Italian Seasoning and Salt to taste
